4 slices of french bread
1 Tbsp olive oil
2 Tbsp mascarpone cream
1 Tbsp light mayonnaise
Salt & pepper, to taste
6 slices of bacon, cooked
6 slices of pepperoni, sliced thin
2 tomatoes, sliced
4 butter lettuce leaves, washed
2 Tbsp light white balsamic vinaigrette (or sweet vinaigrette of choice.)
Lightly spritz bread with olive oil. Grill until it has charmarks and toasted.
Mix together mascarpone cream & light mayonnaise, and salt & pepper to taste. Set aside.
Begin assembling sandwiches by layering 3 slices of pepperoni, 3 slices of bacon, 2 leaves of lettuce, 2-3 slices of tomatoes, vinaigrette, and finally mascarpone cream smear on top piece of bread.
Serve with light salad or fresh fruit for lunch, or a bowl of your favorite soup for a hearty dinner.
