12 slices natural, uncured bacon
12 slices whole wheat bakery bread, toasted
6 Tbsp olive-oil mayonnaise
2 avocados, sliced
2 organic tomatoes, sliced
1½ cups baby arugula
¾ cup crumbled goat cheese
¼ cup fresh basil leaves
Cook bacon in a large nonstick skillet over medium heat until crisp; drain.
Spread one side of each bread slice with mayonnaise; top 6 slices with bacon, avocado, tomatoes, arugula, cheese, and basil. Top with remaining bread slices, mayonnaise side down.
