BLT Caprese Panini
8 slices whole-grain bread
8 slices of bacon, cooked
1 (8-oz) ball fresh mozzarella cheese, sliced
2 Roma tomatoes, sliced
1 cup fresh basil leaves
2 Tbsp balsamic glaze
½ tsp salt
½ tsp pepper
Top 4 bread slices with 2 slices of bacon, cheese, tomatoes, and basil; drizzle with glaze, and sprinkle with salt and pepper. Cover with remaining 4 bread slices. Lightly coat the outside of sandwiches with cooking spray.
Cook sandwiches, in batches if necessary, in a large skillet (or panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.
