Bread Pudding Muffins
1 loaf french bread
2 cups sugar
1 can evaporated milk
1 tsp vanilla
1 stick butter softened
Mix ingredients then add 12-14 slices fresh bread or 3/4 loaf fresh or stale French bread.
Allow bread to soak thoroughly. Place into normal size muffin tins with cupcake liners.
Bake 20 minutes at 350.
Lower Fat: Reduce butter by half.
Lower Carbohydrate: Swap sweetener to sweetener of choice such as Erythritol syrup or monkfruit.
Lower Sodium: Use unsalted butter.
Dairy-free: Use your favorite nut milk, and swap avocado oil or grapeseed for butter.
Gluten-free: Use gluten free bread.
