Strawberry Glacé Pie

Ingredients

1 (9-in) Baked Pie Shell
6 c strawberries
1 c sugar
3 Tbsp cornstarch
½ c water
3 oz cream cheese, softened

Bake pie shell according to recipe or package direction.
Mash enough strawberries to measure 1 cup. Mix sugar and cornstarch ln 2-quart saucepan. Gradually stir in water and mashed strawberries. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; cool.
Beat cream cheese until smooth; spread on bottom of pie shell. Fill shell with remaining strawberries; pour cooked strawberry mixture over top. Refrigerate until set, at least 3 hours.

Variations:
Peach Glacé Pie: Substitute 5 cups sliced peaches (about 5 medium) for the strawberries. To prevent discoloration, dip peaches in an ascorbic acid or lemon juice.
Raspberry Glacé Pie: Substitute 6 cups raspberries for the strawberries.

Lower Carbohydrate: Substitute a zero calorie sweetener such as Monk Fruit in the Raw in place of sugar.
