Prosciutto & Herbed Goat Cheese -Stuffed Shrimp
Ingredients
24 (~1 lb) large shrimp, peeled and butterflied
12 oz goat cheese (may use cream cheese)
4 Tbsp chopped fresh parsley, divided
2 Tbsp minced green onions
2 Tsp chopped fresh oregano
2 Tbsp minced garlic
2 Tbsp Cajun seasoning, divided
12 thin slices of prosciutto, cut in half, lengthwise (~6 oz)
2 Tbsp olive oil

In a mixing bowl, blend the cheese, herbs and garlic, and Cajun seasoning together.
Season the shrimp with Cajun seasoning.
Press one tablespoon of the filling in the cavity of each shrimp.
Wrap each shrimp tightly with one piece of prosciutto & secure with a toothpick.
Heat the oil in a large skillet over medium-high heat.
Add the stuffed shrimp and sear for 2 to 3 minutes on each side, or until the shrimp turn pink and their tails curl in towards their body.
Remove from the pan and place on a large plate. Garnish with parsley and serve.
